It’s my fifth anniversary of What I Ate Wednesday! This week is all about Monday’s eats.
I had some courgette (zucchini) to use up so I started off the day with courgette porridge:
Lunch was a wholegrain pitta filled with tuna and pumpkin seeds with a side of grilled courgette (luckily I don’t get sick of this veggie easily!). Also there was an unsung nectarine.
Followed up with a homemade latte for a hit of sweetness and caffeine:
For an afternoon snack I had a handful of raisins and some almonds – totally forget to take a photo.
Dinner time! I needed something quick and chorizo pilaf fit the bill:
With a grand finale of these bites of heaven – fudge! I made a batch at the weekend but they’re very much all gone now.
Veggies with oats – yay or nay? Had any good eats lately?
