It’s so great how much What I Ate Wednesday is growing – kudos to Jenn at Peas and Crayons! This is my third installment of WIAW and it’s my food diary for Sunday.
The weather has gotten pretty chilly here in Ireland so I really fancied some hot oats for breakfast. That craving and a lonely carrot in the bottom of my fridge resulted in carrot cake porridge!
Lunch was a chickpea salad made with chickpeas, tomatoes and rocket (arugula) with olive oil. I also had a Glenisk plain yoghurt with some cinnamon stirred in.
Afternoon snack time and I had a slice of wholegrain toast covered with cheese spread and some grilled courgette (zucchini). I had a handful of pumpkin seeds in the afternoon too.
My lovely boyfriend fixed me a gorgeous dessert of meringue nests with stawberries, raspberries and whipped cream. These berries were absolutely perfect – sweet, juicy and flavoursome.
I had a hot chocolate before bed too. I never remember to take a photo of my evening snack!
