What I Ate Wednesday #1


I’ve really been enjoying other bloggers’ What I Ate Wednesday posts so I’ve decided to join in with the fun! This is what I ate yesterday.

I had a blackening banana to use up so I thought I’d put it out of its misery by having banana chocolate porridge for breakfast:

Lunchtime and I went for a tuna salad:

In the mix – tuna, a handful of peanuts, black pepper, some cherry tomatoes and scallions (spring onions). I followed this up with a rhubarb-flavoured yoghurt.

For my pre-run snack I had apple slices with a dollop of crunchy peanut butter:

I love this combination of salty and sweet. It’s also the perfect fuel for a workout.

For dinner I had baked rice with chicken and peppers. This is a really handy meal when I run before dinner as I can prep it before I go and then it’s ready for me when I get back!

Followed up by a homemade latte (shot of coffee, cup of hot milk, dash of vanilla extract, teaspoon of brown sugar and a sprinkle of cinnamon) and two Nairn’s oat biscuits. I have to end dinner with something sweet!

For an evening snack I had a kiwi with a handful of walnuts. I ate it before I remembered that I needed to take a picture – still getting used to WIAW! But it wouldn’t have been a very interesting photo anyway. I should also say that breakfast, lunch and pre-run snack had accompanying cups of tea but I didn’t think anyone would be bothered seeing that ;)

    I was so close to having chocolate oats this morning, but decided on pumpkin. Chocolate tomorrow!!
    Lately Ive been eating alot of pumpkin, sweet potato and rice cakes… but I ALWAYS eat alot of them. haha

    I thought about jumping on the WIAW bandwagon today, but I’m thinkin taking pictures the day before would be easier. Oh well. Next week! Anyway.. just found your blog.. love it.. i’ll be back :)

    Apples and peanut butter are like my favorite sweet/salty combo of all time! and I like my peanut butter super crunchy! Do you ever eat apple + almond butter? Similar and equally delish!

      I actually prefer almond butter but it’s an expensive habit!

    I am one of those people who sneaks glances at other people’s shopping carts at the grocery store… therefore… I love WIAW! This was my first week joining in.

    I already have 10 million things I need to try from reading people’s posts today. Smores brownies, Halloumi cheese and peppered turkey bacon from Trader Joe’s. O.O

    I think I’m gonna have your coffee creation tonight. :) Sounds like a delicious way to end my day.

    Allow me to express how much I wish I knew how to make lattes at home! I’ve been spending WAY too much money on Starbucks, but my espresso machine is just so intimidating :(

      It’s super easy! I just heat up the milk and use instant coffee to make a shot-sized amount of coffee – then mix with add-ins like sugar and spices.
